The Hood Nobody Thinks About · Until the Kitchen Fills With Smoke

Ventilation and extraction rarely make the menu, but they decide how a kitchen feels at 8 p.m. on a full Saturday. Here is how we look at the real cost of keeping the air moving, and why we chose HYGIS for our project.

Ventilation and extraction rarely make the menu, but they decide how a kitchen feels at 8 p.m. on a full Saturday. Here is how we look at the real cost of keeping the air moving, and why we chose HYGIS for our project.

Nobody ever booked a table because of the extraction system.

Guests notice the plate, the service and the atmosphere. Yet behind all of it, a hood, a few filters, a run of ducting and a motor on the roof are quietly deciding whether the kitchen is a place where people can work, and whether the dining room smells like dinner or like yesterday’s fryer.

Extraction is not a decoration

A professional hood captures smoke, steam, grease and odours at the source and sends them out through the extraction network. When it works, nobody mentions it. When it doesn’t, everybody does: smoke lingering over the line, a motor that sounds like a small aircraft, filters that saturate within days, neighbours asking about the smell.

From a chef’s point of view, this is not only a comfort question. It is an operations question. A kitchen with poor extraction is hotter, greasier and harder to keep clean, and that has a price in staff energy, in maintenance and in risk.

The real cost is not the invoice

When we talk about food cost, we count every gram. We should look at ventilation with the same discipline. The cost of extraction is not only the day someone cleans the hood. It is made of several things:

  • Regular cleaning and degreasing of the hood, filters, plenum, motor and accessible ducting
  • Repairs and motor replacement when airflow drops or the system becomes noisy
  • Filters that are cleaned, replaced or made to measure when standard sizes don’t fit
  • Odour treatment where the restaurant sits close to homes or other businesses
  • The cost of ignoring all of the above, which usually arrives as an emergency call at the worst possible time

Cleaning frequency depends on the kitchen: the type of cooking, the number of services, the equipment and how much grease the menu produces. A busy grill station and a pastry kitchen are not the same story. The useful habit is to plan it, in the same way we plan deliveries and stock checks, rather than waiting for a symptom.

Symptoms worth taking seriously

If any of these sound familiar, the system deserves a proper look:

  • The hood pulls less than it used to
  • Smoke stays in the kitchen
  • Odours persist
  • The motor is noisy or vibrates
  • Filters saturate quickly
  • Grease builds up visibly
  • Extraction struggles when several appliances run at once

A poorly performing hood does not automatically need replacing. The cause can be saturated filters, a tired motor, a badly set speed controller, an obstructed duct, or a system that was never well matched to the kitchen. A diagnosis before a purchase is usually the cheaper order of events.

Why HYGIS

We are always looking for the best options for your restaurant, and this time we have chosen HYGIS for our project.

What convinced us is that they cover the whole chain rather than a single task. According to their own presentation, HYGIS works on professional hoods and extraction systems, including:

  • Cleaning and degreasing of the hood, filters, motor and accessible parts of the network
  • Diagnosis and repair when extraction is weak
  • Motor replacement, whether a snail-type motor, an extraction box or a rooftop unit
  • Made-to-measure stainless steel filters
  • Fitting and wiring of speed controllers
  • Odour treatment, including activated carbon boxes
  • Installation of hoods and extraction systems for restaurants, with a technical study to match the equipment to the kitchen
  • Annual maintenance contracts

For a working kitchen, one partner who can inspect, clean, repair and, when necessary, install is easier to manage than three separate companies. HYGIS presents itself as a national network specialised in ventilation maintenance (hoods, VMC and air conditioning), created in 2006 and operating as a franchise since 2013, with agencies across many French regions, including Provence-Alpes-Côte d’Azur and Monaco.

A fair note: we are sharing what the company says about its services, and the final cost always depends on your own installation. Hood size, level of fouling, number of filters and access to the motor and ducts all change the quote, which is why a visit and a written estimate come first.

Chef’s verdict

Ventilation will never be the glamorous part of a restaurant. But it protects the people working in the kitchen, the comfort of the guests and the neighbours who live next door. Treat it like any other line in your food cost sheet: know what it takes, schedule it, and don’t wait for the smoke to remind you. A beautiful dish deserves a kitchen where you can see the pass.
